Macaroni & Cheese

Ingredients
3 tbsp Butter
1/2 cup Finely Chopped Onion
2 tbsp All-Purpose Flour
1/2 tsp Salt
2 cups Elbow Macaroni, Cooked & Drained
2 cups
Vern's Shredded Cheddar
(divided)
2 cups Milk
1 cup cooked and crumbled
Nueske's Bacon
(optional)
Directions
Melt butter in medium saucepan over medium heat
Cook onion, if desired, in butter 5 minutes or until tender
Stir in flour, salt, and pepper
Gradually add milk and cook, stirring occasionally, until thickened
Remove from heat
Add 1-1/2cups cheese
Stir until cheese is melted
Add cooked, crumbled bacon
Combine cheese sauce with cooked macaroni
Pour into 1-1/2quart casserole
Top with remaining cheese
Bake at 350° for 30 minutes or until cheese is bubbly and lightly browned
