Cheesy Conundrum Casserole

Ingredients
1 (16oz) Mostaccioli or Penne Pasta
1/2 cup Butter
1/2 cup All-Purpose Flour
3 cups half & half or Milk
1/4 tsp Salt
1-1/4 cups Sartori Shredded Parmesan
4 cups
Vern's Shredded Mozzarella
1 cup
Vern's Shredded Mild Cheddar
1/8 tsp Ground Nutmeg
3/4 lb Cubed Ham
24oz Mixed Vegetables (Carrots, Broccoli, Peas, etc.)
Directions
Cook pasta in a large saucepan according to package directions
Drain and rinse with cold water
Return pasta to large saucepan
Melt butter in a medium saucepan over medium heat
Stir in flour
Cook for 2 minutes, whisking constantly
Gradually whisk in half and half and salt
Simmer for 5 minutes, whisking frequently
Pour sauce over the pasta, add ham and veggies
Toss well
Combine cheeses
Layer half of the pasta mixture in a 9'x13' baking dish coated with nonstick cooking spray
Top with half of the cheese mixture
Repeat layering with remaining pasta and cheese
Sprinkle with ground nutmeg
Bake, uncovered at 400° for 35 minutes or until cheese is golden brown
