Cheesy Conundrum Casserole

So cheesy, so good!

Ingredients

  • 1 (16oz) Mostaccioli or Penne Pasta
  • 1/2 cup Butter
  • 1/2 cup All-Purpose Flour
  • 3 cups half & half or Milk
  • 1/4 tsp Salt
  • 1-1/4 cups Vern’s Shredded Parmesan
  • 4 cups Vern’s Shredded Mozzarella
  • 1 cup Vern’s Shredded Mild Cheddar
  • 1/8 tsp Ground Nutmet
  • 3/4 lb Cubed Ham
  • 24oz Mixed Vegetables (Carrots, Broccoli, Peas, etc.)

 

Directions

  1. Cook pasta in a large saucepan according to package directions
  2. Drain and rinse with cold water
  3. Return pasta to large saucepan
  4. Melt butter in a medium saucepan over medium heat
  5. Stir in flour
  6. Cook for 2 minutes, whisking constantly
  7. Gradually whisk in half and half and salt
  8. Simmer for 5 minutes, whisking frequently
  9. Pour sauce over the pasta, add ham and veggies
  10. Toss well
  11. Combine cheeses
  12. Layer half of the pasta mixture in a 9”x13” baking dish coated with nonstick cooking spray
  13. Top with half of the cheese mixture
  14. Repeat layering with remaining pasta and cheese
  15. Sprinkle with ground nutmeg
  16. Bake, uncovered at 400° for 35 minutes or until cheese is golden brown
