Wild Rice Risotto with Bacon

Wildly delicious!

Ingredients

  • 4 slices Nueske Smoked Bacon, cut into 1/4” pieces
  • 2 Green Onions, sliced
  • 3 cups Cooked Wild Rice
  • 1/4 cup Sour Cream
  • 1/2 tsp Pepper
  • 3 - 4 tbsp Milk
  • 2 tbsp Butter
  • 1 cup Vern’s Swiss Cheese, Shredded
  • 1/2 cup Vern’s Parmesan, Shredded
  • Dash Salt

 

Directions

  1. Fry bacon slightly
  2. Add onions and butter to bacon
  3. Continue frying until onions are translucent
  4. Stir the cooked rice into the bacon mixture along with the cheeses, sour cream, salt, and pepper
  5. Add milk by the tablespoon until mixture is creamy while cooking over low heat until cheese is melted and everything is well combined
