Cornbread Taco Bake

South of the border taste, packed with cheese

Ingredients

  • 1-1/2 lb Ground Beef
  • 1/2 cup Chopped Green Pepper
  • 1/3 cup Vern’s Shredded Mild Cheddar
  • 1-12oz Whole Kernel Corn
  • 1 can French Fried Onions
  • 1/2 cup Water
  • 1-8oz Corn Muffin Mix
  • 1 package Taco Seasoning
  • 1-8oz Tomato Sauce

 

Directions

  1. In skillet, brown meat and rinse with warm water
  2. Stir in taco seasoning, water, corn, green pepper, and tomato sauce
  3. Pour into a 2-quart casserole
  4. In a separate bowl, prepare corn muffin mix according to package directions, except adding 1/2 can of French friend onions
  5. Spoon corn muffin mix around outer edge of casserole
  6. Bake uncovered at 400° for 20 minutes
  7. Top corn bread with cheese and remaining onions and bake 2-3 minutes longer
